Mushroom, Bacon and Egg Breakfast Tarts

I am probably one of the busiest people you could ever know. With work, school, a blog and and running an online store it can be hard to find time to cook and be inspired. I spend a couple hours throughout the weekdays looking through Pinterest and Yummly (my favorite places to go for inspiration) for ideas, inspiration and to brush up on my cooking knowledge. I think a person can never learn or know too much. It's always handy to have a trick or two up your sleeve. For anyone who is busy and can't seem to find time to be inspired, Pinterest and Yummly are great apps you can browse on your phone while you're waiting at a doctor's appointment, walking your dog or watching TV. Multitasking is key! This makes it a lot easier when you finally find time to cook, because you can save all your favorite recipes and have them waiting for you to try out.
Every morning on the weekends, I get up bright and early with all of the ideas I have gathered throughout the week ready to test them out. I definitely try to keep my weekends free and leisurely, but I have always been a morning person. There is nothing like whipping up a delicious and hearty breakfast on an early Saturday morning with the birds still chirping.
This recipe is definitely something that will impress any guest you have over for Breakfast or Brunch. It is something that when put together, looks absolutely beautiful in presentation with all of the complementary colors and flavors. The basic use of Mushroom, Parmesan, Bacon, Kale and egg combines to create a tantalizing combination. All ages are sure to enjoy these, and the handheld size of these makes them portable and great on the go. These are so quick and simple to make because they utilize premade crescent rolls you can buy at your local supermarket. If you need something to bring last minute to a party - these are a winner.
Now like I say in every one of my posts, find quality ingredients. Although a better brand may be pricier, the quality and taste difference is definitely noticeable in the completed product. So if you really want to impress your guests, seek out the highest quality ingredients possible. I recommend using a really nice, high quality smoked bacon. You can get this at specialty grocery stores, and sometimes even in the deli section of your average grocery store. Believe me, it is worth going out of the way for.
Kale is probably my favorite addition to this recipe. I am so glad that it is becoming so widely popular, and I know there are some people who aren't too fond of it because of it's stronger flavor, but it goes amazingly with this dish and also adds great visual appeal. Don't be afraid of it!
